Bolero Tapas Bar and Spanish Grill is the culmination of what has been a decade plus long culinary odyssey for chef/owner Curtis Bramlett. After graduating from Oklahoma State University with a degree in hotel and restaurant management, Chef Bramlett decided to gain a thorough knowledge of classic French cuisine at the French Culinary Institute in New York City where he trained under some of the most notable chefs in the country. After several years in New York, he moved on to Miami where he developed an enthusiasm for the Spanish and Latin American influences in the cooking of that area.

Shortly following his return to Oklahoma, Curtis relied on skills gained from his time at the French Culinary Institute to open Le Cep Bistro in Edmond, specializing in traditional French bistro fare. However, when the opportunity arose to open another establishment at the Centennial in lower Bricktown, he decided to draw upon the Spanish influences that he was exposed to in Miami, thus bringing about the concept of a tapas bar and restaurant featuring food with Spanish, Cuban, as well as other latin American style and flavors.

Located in the very center of the Centennial Building, Bolero is actually a two in one establishment. Separated by the east side entryway to the building, the south room houses the bar and cocktail tables while the north side is the main dining room. All the dishes prepared by the kitchen are available in both the bar area and dining room. Tapas, little appetizer portions of various meats, seafood, vegetables, and pastry, are available both at lunch and dinner and are the most popular of the Bolero’s menu. A full dinner menu featuring steaks, chicken, lamb, and seafood as well as daily Spanish specialties is also offered. The wine list includes many interesting selections from Spain, Argentina, and Chile.

The large windows of the dining room and bar offer beautiful views of the Centennial Plaza and canal. In addition, outdoor dining is available at tables situated right above the canal. Both the dining room and bar are open Monday through Saturday from 11:00 until closed and from 4:00 on Sunday. Bolero in looking forward to celebrating its second holiday season and invites you to be a part of it.
